San Diego Glory Hole 2010

Chocolate Mousse Flan Napolitano




Serves 4 Ingredients:

150 g cocoa powder 3 egg whites


70 g sugar 2 egg yolks 40 g butter

150 g
kills 2 tablespoons milk a pinch of salt


Preparation:

Heat a little milk to a simmer and add the butter, stirring, as is well dissolved add the chocolate powder and dissolve while stirring continuously beat the egg yolks with sugar until foamy and soft peaks then add chocolate and continue beating and once mixed let cool, pour the salt and whisk the egg whites until stiff, add it to chocolate mixed with the yolk and cold and mix well with a spatula. Deals chocolate in individual cups and immediately beat of the refrigerator for a period of one and a half and after that take them out of the fridge and serve.
